WHere is an easy take on a beverage found on the seasonal menu. Designed as a party-sized premix which is bursting with the tastes of the holiday season, which makes it excellent for a holiday party. Reserve the remaining syrup to use in brunch beverages, sweets, or to make another batch of bikinis.
Bikini Recipe
Yields 10 people
Ingredients for the Clementine Cordial (yields 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar
To make the Drink (yields 850ml, enough for 10)
400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch
Instructions
To prepare the Cordial: Put the listed ingredients inside a pan, heat until it reaches a light boil, mixing so the sugar melts. Then, turn off the stove and leave to cool completely. Decant into a clean bottle, close it keeping it in the refrigerator, it can be stored for around one month.
To make Premix: Combine the specified spirits and syrup into a big jug, let it rest for 60 minutes, then filter it preferably using muslin, so it's perfectly clear.
When ready to serve: Add 85ml of the batch mix into your cocktail shaker filled with ice, and stir lightly for a minute to cool it down. Pour to a frosted cocktail glass or a similar vessel, decorate with a few cranberries adding the final touch by giving it a brief mist with the mandarin essence over the drink.
